@amin one of my "impress non-vegetarians" recipes is sweet potato and pecan enchiladas. Mothers Cafe in Austin (a famous, but now-closed vegetarian restaurant) served it seasonally. I never had a written down recipe, but it's just roasted/baked sweet potatoes with pecan pieces mashed in, wrapped in corn tortillas, covered in enchilada sauce and either cashew cream or some white Mexican or jack cheese (cashew cream is better here, honestly, even if you're not vegan), bake.

@amin as with all Mexican and Tex-Mex food, sprinkle on some chopped cilantro and spritz with lime juice, and serve with rice and refried beans or black beans. Avocado or guacamole never hurts the situation.
You can add spices to the sweet potatoes, if you like, but if you bake or roast the potatoes with olive oil and salt, they'll be quite rich.
