The SIM is a tamper resistant hardware security module containing cryptographic material, a QR code sent to an email address is not safer nor easier to use, you need Internet access to activate a new eSIM, otherwise you're hosed.
You're also hosed of your previous phone is broken and you cannot disassociate the eSIM from it.
