(as you've probably guessed, I'm not a friend of docker; it's nice to quickly test software and not have the hassle of big installs, but IMO it adds a level of complexity I shy from)

According to https://docs.ghost.org/install/local it ought to be possible to install it on a VPS without.
Might that be easier for you? Particularly since you could experiment doing so on, say, a Virtualbox VM you launch on your laptop.
