@paul_ipv6 @lev1a we recently did salmon in the smoker with broccoli. super healthy, but totally not interesting
@Viss @paul_ipv6 @lev1a
Replace the broccoli with fresh spinach. Or avocado.Maybe add a bit of mozzarella. That is it. You're done. No need to cook or steam it (except for the spinach, maybe briefly)
Healthy(ish). Plus, you can put it on a sandwich, roll, just these combined in a bowl, or with pasta (maybe not the avocado but ehh)
So good

@Viss looks delicious!
We do something similar as a tray bake - line a half sheet pan with tinfoil, throw in a couple kinds of veg (mushrooms, carrots, broccoli, sweet potato, eggplant, etc. - whatever looked good at the market that morning) to roast at 425°F, then add the salmon for the last ~15 minutes. Combustion Inc predictive thermometer set for 128°F takes all the guesswork out of when the salmon is done... ☺️
Super easy, always tasty, and my favorite part is that cleanup is "throw out the tinfoil and wipe down the sheet pan". 😇 -
OK, so not a wet wire...

@Viss even though the weather outside is decidedly un-Christmas (55 and sunny) I decided on classic winter comfort food: braised short ribs served on polenta
