I’ve changed up my fry up game. Usually I brown the meat, onion or other additives and add scrambled eggs and mix it all up Or omelette style with the ingredients folded in the middle I have deconstructed the omelette. Fry meat/onion/peppers/etc then crack two eggs on top sunny side up. After a bit, as the egg starts to firm up from the bottom, add a splash of water for steam and cover. After egg is approaching your desired consistency, put slices of cheese right on top. Cover till melted
