No, it's not "time to go eSIM-only worldwide", because changing phone is not a process that the carrier should be involved in any way, the fact that it has always been like that in the United States is irrelevant to the rest of the world.
The SIM is a tamper resistant hardware security module containing cryptographic material, a QR code sent to an email address is not safer nor easier to use, you need Internet access to activate a new eSIM, otherwise you're hosed.
