@elettrona this is because each YunoHost app has a volunteer (or a team of volunteers) manually patching packages and making them compatible with the YunoHost system. I guess they haven't had time to upgrade GoToSocial yet, but since there are no critical security issues, you should be all set. Think of it as routine app upgrades... for some you don't necessarily need the latest thing...
