@alex the first issue should be fixed with the latest release. If you open an old post (that was not federated yet), it should default to "Do not federate". Regardless of the default, you can always set "Do not federate" even for new posts!
You can find it in the sidebar of the block editor in the "fediverse" section.

@alex @pfefferle@notiz.blog regarding your second issue: you have started following others, so your inbox is open to general Activities and no longer only to replies.
This means you might also receive messages from random users, if the fediverse server decides it might be interesting for you. We already limited the traffic to the data from people you follow, but this includes all the replies/reactions to that data.
