  • @amin it's really nice, and it's a forgiving non-stressful recipe. Takes a while for all the baking steps, but most steps are independent and don't require a lot of attention. It's hard to mess up. And, it's impressed just about everybody I've ever served it to. It punches far above its weight in terms of impressiveness to difficulty. You can even use canned enchilada sauce if you're in a hurry, it turns out fine.

  • @amin as with all Mexican and Tex-Mex food, sprinkle on some chopped cilantro and spritz with lime juice, and serve with rice and refried beans or black beans. Avocado or guacamole never hurts the situation.

    You can add spices to the sweet potatoes, if you like, but if you bake or roast the potatoes with olive oil and salt, they'll be quite rich.

  • @amin one of my "impress non-vegetarians" recipes is sweet potato and pecan enchiladas. Mothers Cafe in Austin (a famous, but now-closed vegetarian restaurant) served it seasonally. I never had a written down recipe, but it's just roasted/baked sweet potatoes with pecan pieces mashed in, wrapped in corn tortillas, covered in enchilada sauce and either cashew cream or some white Mexican or jack cheese (cashew cream is better here, honestly, even if you're not vegan), bake.

    If it is approved it will be available at https://addons.mozilla.org/en-US/firefox/addon/uglymug/. I don't plan to submit it to the Chrome extension store but anyone is welcome to copy the code and do so.

    Meanwhile if you'd like to try it out before it's approved (trust me bro) you can get the extension from https://we.tl/t-VZw12WGo7q and then unzip the contents into a new folder.

    Installation Instructions:

    For Chrome:

    Open Chrome and navigate to chrome://extensions/ Enable "Developer mode" (toggle in top right) Click "Load unpacked" Select the folder where you unzipped the files to.

    For Firefox:

    Open Firefox and navigate to about:debugging Click "This Firefox" Click "Load Temporary Add-on" Select the manifest.json file

You can share code between forks, so it also benefits Vivaldi to have forks available.And if you maintain your software well and do what your users want, there would be no need for anyone to make a fork in the first place.These are not not valid reasons.
