@paul_ipv6 @lev1a we recently did salmon in the smoker with broccoli. super healthy, but totally not interesting
@Viss @paul_ipv6 @lev1a
Replace the broccoli with fresh spinach. Or avocado.Maybe add a bit of mozzarella. That is it. You're done. No need to cook or steam it (except for the spinach, maybe briefly)
Healthy(ish). Plus, you can put it on a sandwich, roll, just these combined in a bowl, or with pasta (maybe not the avocado but ehh)
So good

@Viss looks delicious!
We do something similar as a tray bake - line a half sheet pan with tinfoil, throw in a couple kinds of veg (mushrooms, carrots, broccoli, sweet potato, eggplant, etc. - whatever looked good at the market that morning) to roast at 425°F, then add the salmon for the last ~15 minutes. Combustion Inc predictive thermometer set for 128°F takes all the guesswork out of when the salmon is done... āŗļø
Super easy, always tasty, and my favorite part is that cleanup is "throw out the tinfoil and wipe down the sheet pan". š -
OK, so not a wet wire...

@Viss even though the weather outside is decidedly un-Christmas (55 and sunny) I decided on classic winter comfort food: braised short ribs served on polenta
