@howisyourdog there is a public recipe! Here’s the link. It uses butternut squash but you could use any. I used maple syrup as substitute for honey.

@helenclayton @howisyourdog I still have three butternut squash left from the garden. One is really big. Maybe that would be a good use for part of it.

@helenclayton @suearcher Possibly a winter squash? Maybe Kabocha? They do sound nice. I have a baked cheesecake in this afternoon's plans.

@helenclayton yes, I used this one and it turned out very nicely. I can still taste the beetroot a little bit but I think it complements the chocolate well.
I'm not gluten intolerant, so I used plain flour and plain baking powder.
@howisyourdog have you a link? I imagine the beetroot makes the cake nice and moist.

A friend gave me a chunk of squash from an enormous one she couldn’t finish. I don’t know what variety (now need to find out) but when roasted it was sweet and tasted like chestnut. So I pureed it and made spiced muffins with a maple glaze. I think this is how I’d like to eat all my squash now!

@helenclayton that looks really yummy. Might be a way to get my kid to eat squash. You should try zucchini bread as well. Something I grew up with when my mom was figuring out how to use all the zucchini. Zucchini pancakes were less tasty.

@CarmenSD11235 oh I make anything with zucchini (courgette to us Brits) that I can! There’s always a glut. Chocolate courgette cake is good. And I love courgette pancakes!

@howisyourdog mmm Tia Maria 😋. I’d leave it out too, if only because it’s not something I buy. I’m sure my parents used to have it in the drinks cabinet.

@helenclayton I'm not allowed to plant zucchini anymore because the one plant I raised produced way too many for my family and work team to handle. Folks in the community loved it though. Even the massive ones that I didn't catch in time.

@helenclayton That is interesting. I have gone crazy over Japanese sweet potatoes because they taste just like roasted chestnuts to me. I didn't know that some types of squash did too.

@helenclayton 😂 I remember my dad growing at least two every year and my mom would always shake her head. We would also have at least a half dozen tomato plants as well because he wanted variety. My sibling hates tomatoes but it was long before his obsession with tomatoes. Dad had his section of the garden and mom had hers. They're still going at it decades later.

@helenclayton I find Kubocha winter squash is particularly sweet, flaky, and chestnut-y.
